the two meals i've cooked in the past two weeks...

I edited the recipe to what we had in our cupboards

• Meatloaf:
• 1 cup SkimMilk
• 1 cup of Bread Crumbs
• 1 1/2 pounds Ground Beef
• 1 cup Grated Parmesan Cheese
• ¼ teaspoons Seasoned Salt
• Freshly Ground Black Pepper
• Better n Eggs equivalent of 3 eggs
• 10 slices Thin Bacon
(I also added some garlic and onion powder to the mix and a little brown sugar)
• Sauce:
• 1-½ cup Ketchup
• ⅓ cups Brown Sugar
• 1 teaspoon Mustard
• ½ cup bbq sauce

I cooked ours the same way as instructed on PW's site.
Here is our meatloaf.
Going into the oven...

Fresh out of the oven and cut, I wanted to make sure the whole thing was cooked through since it's so thick!

It was delicious! Billy and I both really liked it and he had some leftovers for lunches the rest of the week ;)
here is the exact recipe and prep directions --->
Pioneer Woman

LASAGNA ROLL-UPS

12 uncooked lasagna noodles
Cooking spray
1 lb lean ground beef or ground turkey breast
1/2 cup chopped onion
1 tbsp. bottled minced garlic
11 tub part-skim ricotta cheese
1/2 cup egg substitute
1 (26 oz jar) marinara sauce of your choice
1/2 cup grated Parmesan cheese
garlic and onion powder to taste
preparation...
Preheat oven to 375°F.
Cook lasagna noodles as directed on package.
Heat a large skillet over medium-high heat. Add beef, onion and garlic. Cook until browned, breaking up meat as you stir. Drain.
 In a bowl, combine ricotta, egg substitute, garlic and onion powder and meat/onion. Coat a 13-by-9-inch baking dish. Spread 1 cup sauce in baking dish. Working with one noodle at a time, spread a heaping 1/2 cup meat mixture over noodle, roll noodle up and place, seam side down in sauce in baking dish. Repeat with remaining noodles and filling.
Pour remaining sauce over noodles.
Cover and bake for 25 minutes or until bubbly.
Remove from oven and sprinkle with parmesan cheese.


The roll-ups were really yummy as well and very filling!
I only ate one and billy two, we had lots of leftovers.
I would like to make these again and I think the only thing I would do different is add 4-6 ounces of light cream cheese to make them creamier inside, they seemed just a little dry.

  19. oh yummy!! we love lasagna rolls!! I've made Giada's (from the food network) and they are always a huge hit! and I definitely need to make meatloaf soon! bookmarking now! ;)

  22. MMMMMMM- I've made PW's chicken pot pie and BBQ meatballs in the past week-both are excellent! BTW-I'm not sure if you thought if it, but I use cottage cheese instead of ricotta in lasagna-it is much creamier and a little healthier than cream cheese...not that I'm a health nut- I LOVE cream cheese. Give it a try :)
