a lot of foodie this, a lil of random that....

beef enchiladas - for 6-10! 
2 pounds ground beef
two giant onions
2 cans of enchilada sauce
1 bag of cheese
2 packets of taco seasoning
cook ground beef and onion
mix together beef, onion and taco seasoning together
stuff tortillas with mix and add a little cheese
add some enchilada sauce over top
bake at 350 for 10 minutes
top with 1 more bag of cheese, bake for 10 minutes
serve and top with black olives and sour cream!
for side dishes we had mexi rice and beans mixed with cream cheese! so yummy! 
we also had chips and salsa as apps ;)  there was plenty leftover of everything!!

B and I went to ColdStone a day last week, it was the first time I'd ever been there.
For six bucks of candyland ice cream in a chocolate coated waffle cone with sprinkles, I think I'll be perfectly fine if I never have it again. haha!! I might have had 5-10 bites, it was super sweet!

crack flavored oyster crackers!!
 half packet of ranch dip seasoning
pinch of onion salt 
pinch of garlic powder
triple pinch of dill seasoning
3/4 cup of oil
1 package of oyster crackers
mix all together in a baggie and bake at 215 for 20 minutes
you will be addicted!!

i found a very similar recipe on pinterest and HAD TO HAVE IT!
one giant cucumber
3 roma tomatoes
lots of EVOO
pinch of greek seasoning
pinch of garlic powder
pinch of onion salt
( i prefer "pinches" over measuring)
couple of green onions chopped up
container of feta cheese (reduced fat)
chopped up flat bread (sea salt/rosemary)
 these pics were taken after we all had dived in ;)

we had unexpected company that night so i threw it together, they loved it and so did we!!
it was filling, i had it as my dinner.

  8. I make those oyster crackers for any family wedding or baby showers. They are gone almost as soon as I put them out! :-)
